A Healthy, Holiday Dessert to Try!

Do you need a new idea for a holiday party dessert?   Would you like your dessert to be healthy, dairy free, but still sweet and full of flavor?  This may be your answer. 

 

The Navitas Naturals website is filled with recipes using chia and other products that they produce and I had to share this one.

 

Apple Pie Chia Pudding  Apple Pie Chia Pudding

Serves 4

Ingredients:

2 c.      apple juice
1 Tbs   fresh Lemon Juice
¼ c.     raw cashews
1 Tbs   ground cinnamon
¼ tsp   ground ginger
⅛ tsp   ground nutmeg
pinch   sea salt
¼ c.     raisins
⅓ c.     chia seeds
1          apple, grated

 

Directions:

In a blender, combine the apple juice, lemon juice, cashews, spices and a small pinch of sea salt. Blend into a cream. Pour into a quart-sized mason jar with a lid, and add the raisins, chia seeds, and grated apple. Cover, and shake well to combine. Refrigerate for 20 minutes to allow the chia seeds to swell and gel. Stir the mixture and shake again very well, then refrigerate for a minimum of 40 minutes longer, or overnight. To assemble, place 1 cup of the pudding in a serving bowl or glass. Top with desired garnish, such as coconut whipped cream, additional apples, chopped nuts, and a dash of spice. Pudding will last for 4-5 days, refrigerated.

Chef’s Notes:

Great for entertaining, you can make it the day before, and assemble easily right before serving.
